Lebanese Taverna's Recipe for Tabouleh

Servings: 6
Time:1 ½ hour

INGREDIENTS: We carry
¼ cup Extra Virgin Olive Oil
4 tbsp Bulgur, #1

INGREDIENTS: You need
½ onion, chopped fine
½ cup fresh lemon juice
3 tomatoess, diced small
4 bunches Parsley, Chopped fine
2 tbsp fresh mint leaves, chopped salt & pepper to taste


FOR GARNISH:
1 head romaine lettuce
Diced tomatoes

STEPS:

1. Clean and strain the bulgur, soak and strain the parsley several times to clean thoroughly.
2. Put onion, lemon juice, bulgur, 2/3 of diced tomato (reserve 1/3 for garnish), mint leaves, salt and pepper together in a large bowl and mix well. 15 minutes before serving, add the parsley and oil and mix again.
3. Serve with hearts of Romaine lettuce leaves and diced tomato as garnish.

Notes: Tabouleh can only be great if the parsley and mint are hand chopped with a very sharp knife to avoid bruising.

Traditionally Tabouleh is eaten using lettuce, fresh vine leaves or white cabbage as scoops. You can use a fork too, of course.
